I don’t have a green thumb, but I really wanted to take part in Inji Pennu’s
Green Blog Project.

poor methi has had enough of indoor gardening…

Last month I planted methi seeds and some radishes, catnip and cilantro.
The methi was coming along quite nicely until the past few days when it started to yellow — almost as if to say “enough of this windowsill already — I want outdoors”!! It was high time I plucked off the baby leaves, but I had very few and couldn’t think of a thing to make. Then I remembered that old standby, the scrambled egg. So here is a very simple recipe with just a few ingredients, quick enough for a fast breakfast, lunch, or late-night snack.

Soft-scrambled Eggs with Methi and Shallots

2 eggs
4-5 shallots (baby red onions)

1 tsp butter or ghee
1/2 tsp mustard seeds
3-4T TB fresh snipped baby methi leaves
salt and chile pepper to taste


Dice the shallots and chop the methi.

Break the eggs into a small bowl and if you like fluffy scrambled eggs, add 1 TB water. Beat well with a fork to blend.

Have a warm plate ready before you cook — this will take about five minutes at the most.

In a small skillet, melt the butter or ghee over medium-high heat and pop the mustard. Add the diced shallots and let them begin to brown. Add the beaten eggs and cook, stirring every few seconds, until they are almost set. Fold in the chopped methi and let them cook a few seconds longer, then turn onto the warm plate. Sprinkle with salt and chile pepper to taste.

Voila, that’s it!

    the weather is getting better and better. atlast we can start our little gardening project. cant wait to try my hand in gardening. last year it was dissaster. this time i am better equipped;)

    Great idea to mix the two Linda.We add cilantro and curry leaves to eggs.Methi is healthier addition to that as well.Bitter Methi leaves are believed to help control Diabetes!Great entry.I am ready to sow some Methi too next week:)

    I have the same story, my spinach was gorwing fast, now with winter back they are almost complaining, we won’t grow till you take us outside!     linda, i can see the leaves yearnig for some sun, the way they are leanng towards the light. i didn’t bother planting anything this winter.

    Yes Shaheen, they do tend to lean. Kept turning them twice a day! Time enough to plant when the warm weather gets here 🙂

    Linda, adding fresh methi to eggs is really creative. How did you manage to get baby red onions. I can never get hands on them here. Looks gorgeous.

    Hi Seema, thanks for your kind words 🙂 Baby onions come from one of the local Asian groceries near by– lately I have also seen them for sale (although at ridiculous prices) in some of the natural foods markets (like Whole Foods etc) as well. Same product, twice the price — ugh 🙂

    You could get a Dr. Seuss book and call it “green eggs” — but no ham! 😉

    Linda, Scrambled Egg with Methi sounds tasty -healthy, I too planted methi indoors with not a lot of sunshine not too many leaves so this will be a wonderful dish to make.

    There there that Indian touch again you served it on a Pappad!!
