quick and easy leftover surprise

A weekday dinner ready in a flash; healthy and delicious thanks to Dilip’s dill dal.

Dill Dal Dish

1 tsp oil
1 tsp mustard seeds
1 tsp cumin seeds
1-2 slit green chiles
1 tsp ginger garlic paste

1/2 c chopped onion
2 c chopped cabbage
1 carrot grated
1 c leftover cooked rice
1 c leftover Dilip’s dill dal

salt to taste

~~~
Heat oil and splutter the mustard. Add cumin and cook a minute, then add green chiles and ginger-garlic paste. Cook 2 minutes on medium heat, then add chopped onion and cook until translucent. Add cabbage and carrots, stir well and sprinkle with 1-2 TB water. Cover the pan and cook until cabbage is tender, 10-15 minutes. Stir in leftover rice and dal, and heat through. Salt to taste, and serve hot with crunchy papads.
    Linda, that is a quick healthy meal and with papadams would make any meal grand.
    thanks isg… and you’re right about the little papads — they make any meal grand 🙂 how’s it going with carb-cutting? I haven’t done so well in January with my ‘resolution’ but tomorrow’s another day 😉
    Thanks Asha — sometimes I break up those papads at work and zap in microwave — looks like I’m having a big snack but I know better! Wish I could get into Foodie’s Hope — am getting ready to write to blogger in protest 😉
    Oh what a great idea!!!! love those Papads..you know what I do, when I crave something spicy, I toast the papads, sprinkle a little bit of chili powder, salt(if you want) a pinch of sugar, a drizzle of oil and savour it!!! Its so good too!
    Take care, hope you will take part in the Little Chefs Event!
    Hi Trupti — thanks for the tip about chili pwd and salt — I have thought about getting a new shaker just for seasoning and your comment reminded me. I will try for little chef’s — my little chef is a little older but maybe I can come up with something — such a nice idea you had there! 🙂
