Toll House Cookies

Cool autumn air has finally arrived, making it a pleasure to turn the oven on again.
This year more than others — perhaps a little fallout from the oldest child going off to college — I find myself ‘nesting’ — looking to cook comfort food and plenty of it.

Toll House cookies are one of the few things I can bake without studying the recipe. They were a staple in my home as a child, though my mom made them a little crispier than I cared for. Tonight, my daughter and I made them together.
She noticed me taking photos, and felt they looked better broken in half, to show the melty chocolate. So I let her break one cookie — then we ate them. πŸ™‚

Toll House Cookies
(Chocolate Chip Cookies)

1 c butter or margarine, softened
3/4 c sugar
3/4 c brown sugar, packed
1 tsp vanilla
2 eggs

2 1/4 cups all-purpose flour
1 tsp baking soda
1 tsp salt

2 c chocolate chips
1 c nuts (optional — they do belong in the traditional toll house recipe)

Preheat oven to 375 F.

Cream butter and sugars together, then add eggs and vanilla. Sift flour, salt, and baking soda together. Gradually add flour mixture to butter/sugar/egg mixture, making sure to incorporate all the flour. Mix in chocolate chips and optional nuts.

Using two teaspoons, drop cookie dough onto ungreased cookie sheets. Bake in preheated oven approx 8-10 minutes. Remove from oven, allow to cool a few minutes on the sheet, then finish cooling on cookie rack.

Makes approx 4 doz small cookies.

Serve warm with milk to please kids of all ages.
